I need to knead....

Can I just start off by saying that I love dough? I love dough. To be more specific, I love yeast dough.
I love the smell of the yeast in dough. I love the way if feels when I am kneading the dough.
Truly, it is like therapy for me. When I am having a super hard day, I will make bread. I will stand at my kitchen table and knead away all the frustrations and anxieties that I may have had.
It also makes me feel like a good mama. Like Donna Reed good. Because here I am in my flour covered apron, with all of my beautiful children buzzing around, and I feel so happy!
A lot of recipes give you a certain amount of time that you should knead your dough- I don't follow it! I fold it and turn it and squish it until I am sure that it is just right.
Now, there are some people who will use a bread machine (gasp). I used to have one. If you are one of those people, you do not know what you are missing out on! Really, try it and you will see what I mean.
Right now, as I type, I am making Ultimate Cinnamon Buns from Cook's Country and you can find them here http://www.cookscountrytv.com/recipes/detail.asp?docid=17864 . If the link doesn't work don't blame me because I am not good at links. If you can school me on links, that would be great!
Anyway, back to the buns. They. Are. Awesome. They do take some time but all things that rise take time. Make them tonight and stick them in the fridge to bake in the morning. OR make them and bake them tonight and eat them while your children are in bed!

Mrs. K,
I always loved to knead too... funny story: first time I made bread all by myself, my mom was telling me how wonderful the kitchenaid was. So, she said it wouldnt take anytime to make. I went at it, combining all the ingredients in the bowl, mixing them together; the instructions said :KNEAD FOR 3 MINUTES. So,(thinking it was what I was suppossed to do) I took the dough out of the machine, and kneaded it. Mom came in, and just started laughing. :)

The rolls sound good! I;ll have to try them sometime. Mom has me making dinner on Tuesday's - so I'll need some fun recipes for desert and stuff!
